Chicken Casseroles




Chicken casseroles are some of the most popular chicken recipes around. Here are a few of my family’s favorite chicken casseroles. Enjoy.

* Chicken Casseroles Recipe 1

1 (8 ounce) package of wild rice cooked 2 Cups chicken meat, cooked, boned and cut in chunks 2 cans of cream of chicken soup ½ cup of chicken broth

Make rice per instructions on package. Mix everything and bake uncovered for 45 minutes at 400 degrees.

Chicken Broccoli Casserole

George H. W. Bush favorite Chicken Broccoli Casserole

6 or 7 chicken breasts 2 packages frozen or fresh washed broccoli 1 package of Nacho cheese ¼ cup of cooking sherry

Brown chicken in a heavy skillet and put in a casserole dish. Mix broccoli, Nacho cheese sliced, and sherry together. Pour over chicken and bake for one hour at 350 degrees.

Italian Chicken and Mushrooms

5 or 6 Chicken breasts 2 cups of fresh mushrooms ½ cup Italian salad dressing 1 large onion chopped medium 1/2 lb. shredded mozzarella cheese

Soak mushroom in salad dressing for an hour or longer. Brown chicken breast and place in casserole dish. In heavy frying pan sauté onion in butter. Drain mushrooms and add to onions. Mix with cheese. Pour on chicken and bake for 45 minutes at 350 degrees.

Chicken Scalloped Potatoes Casserole

5 to 6 chicken breasts 3 average sized potatoes sliced thin 1/3 cup Parmesan cheese 1/3 cup of cream A sprinkle of paprika

Sauté chicken breast until done. Layer chicken, potatoes and cheese in a large greased casserole. Pour milk over potatoes and sprinkle with paprika. Cover loosely. Bake at 350 degrees for forty-five minutes.

Chicken Spaghetti Casserole

1 Boiled chicken 1 pound of spaghetti nearly done (al dente) 1 large can of tomatoes 2 onions chopped 1 bell pepper chopped 1 pint coffee cream ½ pound of New York cheese cut in small pieces 2 tablespoons chili powder (optional) Pinch of soda

Boil chicken with onion a little garlic and a rib of celery until tender.

Add salt and pepper and water if needed to make a full cup of broth.

Remove skin and bones and cut chicken in bite size pieces. Boil spaghetti until just barely tender (al dente). Add tomatoes and chili powder and cook until thick. Stir in a pinch of soda then the cream and cheese and remove from heat instantly. Butter a casserole dish and put alternate layers of spaghetti and chicken, adding sauce to each layer and ending with spaghetti on the top layer. Heat oven to 350 degrees and bake for fifteen minutes for one of the yummiest chicken casseroles.
