Italian grilled Cheese Sandwiches:
*4 one inch thick slices of Italian bread *4 slices
of mozzarella cheese *3 large eggs * ½ cup of milk * ¾ teaspoon
Italian seasoning * ½ teaspoon of garlic salt *2/3 cup Italian seasoned
bread crumbs
Cut a 3 to 4 inch pocket in each slice of bread,
stuff pocket with mozzarella cheese.
In a bowl beat the eggs, milk, Italian seasoning
and garlic salt until well blended.
Soak the bread in the egg mix for a couple of minutes
on each side.
In a shallow pan coat each side of the bread with
the bread crumbs.
Grill the sandwiches on a greased hot griddle or
heavy frying pan until golden brown on both side and the cheese
is melted.

Great Make Ahead Sandwiches:
* 2 pounds of ground beef * ¾ cup chopped onion *
1 cup of catsup * ¾ cup chopped dill or sweet pickles *1 ½ teaspoon
of salt * ½ teaspoon granulated garlic *1teaspoon hot sauce *1 ½
cup of shredded mozzarella cheese *12 hot dog buns split
Cook beef and onion, Drain. Stir in pickles, catsup,
salt, pepper, garlic and hot sauce.
Heat throughout.
Stir in the cheese.
Put about a third of a cup on each bun. Wrap in heavy
foil and freeze.
To serve, bake in the foil at 400 degrees for a half
hour or until hot throughout.

Philly Cheese Steak:
*12 ounces (sliced so thin it only has one side,
ha ha) eye of round roast * ½ thinly sliced onion *4 ounces mushrooms
sliced (optional) *2 tablespoons olive oil *2 French baguettes sour
dough and thin or Italian 6 inch sub roll *4 thick slices of provolone
cheese
Put oil in skillet, on high heat, add onions and
mushrooms. When looking translucent add the meat on top of the onions
and mushrooms. Mix thoroughly and cook until meat browns.
Shape to fit bun and add cheese
Add meat and pickle if you like pickles

Roast Beef Pitas:
*1 cup of plain yogurt * ½ teaspoon of dried dill
*1 teaspoon of mustard *1 medium bell pepper chopped (your choice
of color) *2 pita breads cut in half * ¾ pounds of thinly sliced
cooked roast beef *1 cup of alfalfa sprouts
Mix yogurt, dill, mustard, and chopped bell pepper.
Fill each pita half with ¼ of the beef and ¼ of the sprouts and
top with yogurt dressing
Makes four half pitas filled.

Sausage and Peppers Sandwich:
*1 pound of fresh Italian sausage links (sweet, mild
or hot) * ½ cup of water *1 tablespoon of olive oil *1 medium green
pepper sliced thin *1 medium red pepper sliced thin *1 large onion
sliced * ½ teaspoon dried oregano * ½ tablespoon chopped fresh basil
or ½ teaspoon of dried basil *4 French style or hoagie rolls split
and roasted
Brown sausages turning once or twice in a large heavy
skillet over medium heat, about 5 minutes. Add water and bring to
a boil, Cover lower heat and simmer until almost done, about ten
more minutes. Drain on paper towels.
If pan is dry add some olive oil, increase heat and
add bell peppers, onion, oregano and basil. Cook until veggies are
crisp, about five minutes. Return sausage to pan and heat through.
To serve hollow out some of the dough to form a bed
for the sausage. Top with veggies and serve.

Deli Dipped Beef Sandwich:
*1 pound of cooked thinly sliced beef from the deli
*1 cup beef broth *1 minced toe of garlic *4 hoagie buns *2 tablespoons
of butter
Spread buns with butter and grill. Heat beef broth
and add garlic. As soon as the broth gets hot add the beef, leaving
in broth for a few minutes. It just heats the meat don’t cook.
Divide the beef in four and put on the buns, add
the broth in a cup for dipping.
