Main Courses 1

*Fancy Pants

If you only try one of my main courses, let it be Fancy Pants.

2 pounds of good ground beef 1 pound of New York sharp cheddar cheese Granulated garlic 2 (15 ounce) cans of tomato sauce Salt and pepper

Form eight equal patties from the meat. Cut the cheese into slices, place equal amounts of cheese on half the patties and place remaining patties on top of cheese. Pinch the edges so cheese doesn’t leak out. Sprinkle the bottom of the pot with granulated garlic, brown patties on each side (there’s no need for oil) and cover with tomato sauce. Cook until done over medium heat for about thirty minutes.

*Bacon Cheese Franks

8 hot dogs Cheddar cheese cut in strips 8 slices bacon

Slice hot dog lengthwise 2/3 deep. Fill each hot dog with cheese. Wrap each one with a slice of bacon. Broil until bacon is done (about ten minutes). Good served with baked beans and cole slaw.

*Easy Sunday Ham Recipe

Any size ham for your family needs (approximately ½ pound per person) 1/3 cup yellow mustard 1/3 cup brown sugar (light or dark) For larger ham increase these amounts

Mix mustard and sugar. Coat ham thoroughly with mixture. Pre-heat oven to 325 degrees. Tent with aluminum foil and bake for approximately 1 hour per pound. Excellent as a leftover.

*Roast and Noodles

3 pound boneless chuck roast (trimmed) Granulated garlic 3 bay leaves 1 (14 ounce can whole mushrooms)

2 (28 ounce cans) tomato sauce 1 lb. egg noodles (cooked according to package directions)

Sprinkle bottom of large pot to cover with granulated garlic. Brown chuck roast on both sides. Cover with tomato sauce, mushrooms and bay leaves. Cook on medium low heat about 2 hours. Remove roast and place on a platter. Remove bay leaves from sauce. Mix noodles with sauce. All you need to complete the meal is a green salad.

*Pork Tenderloin

3 to 4 pound pork tenderloin 1 medium onion chopped 1 (15 ounce) can tomato sauce A few shots of Worcestershire sauce

Place the tenderloin on a large piece of aluminum foil. Mix the other ingredients and spread over meat. Close foil and put on a shallow pan. Bake at 35 degrees for about 5 hours. Slice meat into medallions and pour gravy over meat. Serves 6 to 8 people.

*Sloppy Joes

2 pounds lean ground chuck 1 medium onion chopped 1 (15 ounce) can tomato sauce Granulated garlic Salt Hamburger buns

Brown meat and onion. Add tomato sauce and granulated garlic and salt to taste. Serve on hamburger buns.
